Gluten Free Food Suggestions
I was talking with another Mum today about Gluten Free foods and, since so many GF foods seem to be very good or really BAD and can also be expensive, we thought it might be useful to save parents who are starting down the GF trail some time & money by offering a list of foods we have had success with.
There are of course a number of dietary interventions you may like to try for those on the autism spectrum including casein free, GM free, cutting out particular additives etc. but these foods only take gluten elimination into account. So here are my GF family favourites....

- Golden Days' Fruit Poles (good for lunchboxes 98% fruit)

- Basco brand muffin & cake mixes
- Orgran Rice & Corn pasta spirals
- Creative Gourmet's French Style Crepes (frozen food section - these are FANTASTIC & can be served as sweets or savoury)
These are the obvious winners in our house but I will think of more I have missed as I use them I'm sure. Will add a couple of easy recipes soon too. Hope that saves someone a bit of leg work.

Gluten free recipe: Sponge Cake
Great idea! We are Gluten Free too and I have a friend who is coeliac. She had a fantastic sponge cake recipe I begged her for & thought I would share it:
4 eggs (55g or more); 3/4 cup castor sugar; 3/4 cup GF cornflour; 1 tabspn GF custard powder; 1 teaspn cream of tartar; 1/2 teaspn bi-carb soda; 1 teaspn vanilla essence; pinch of salt; copha & GF Pln flour for greasing pan/s
Melt copha & add some GF Plain flour to make a smooth paste. Brush over bottom and sides of 2 x 8" tins and allow to set in fridge before using.
Separate eggs. Beat whites until stiff. Gradually add castor sugar. Add yolks one at a time and vanilla essence. Fold in dry ingredients which have been thoroughly sifted. Bake in moderate oven 180oC for 20 minutes. Allow to cool on rack. Great dusted with icing sugar &/or with whipped cream & strawberries. Yum!
Gluten Free Recipe - 5 min individual Chocolate Mug Cake
This is our absolute Favourite!!
4 tabs GF Self Raising flour (I use White Wings), 4 tabs sugar, 2 tabs pure cocoa powder, 1 egg, 3 tabs milk, 3 tabs oil, vanilla extract
Place dry ingredients into a LARGE coffee mug & combine. Add egg, milk & oil in turn, stirring each in to combine. Add a couple of drops of vanilla extract & stir through. Microwave in mug on 60% power for 3 1/2 minutes. Cake may rise over the mug (like a souffle) but, so long as your mug is big enough, don't be alarmed. This is normal. When cooked, run knife around inside of mug & tip cake onto plate. If there is a small amount left in the bottom of the mug, that's yours since the kids will make short work of the rest!
Gluten Free Recipe - Cherry Clafoutis (cherry custard pie)
This recipe receives rave reviews every time I make it & it's SO easy
500g fresh cherries (or a can of pitted cherries well drained), 1/2 cup GF Self Raising flour (I use White Wings), 1/3 cup sugar, 2 eggs lightly beaten, 1 cup milk, 25g butter melted (I use Nuttelex), icing sugar for dusting
Preheat oven to 180oC. Brush a 23cm ceramic pie plate with melted butter. Pit the cherries & spread in dish in a single layer. Sift flour into a medium bowl. Add sugar & make a well in the centre. Add combined eggs, milk & butter gradually, whisking until just combined (don't overbeat). Pour batter over the cherries & bake for 40 minutes. Remove from oven & dust with icing sugar. Serve hot or cold. You can also use other berries or poached pear for a variation.
Gluten Free Recipe - Easy Impossible Pie (sweet or savoury)
One Bowl Impossible Pie (Sweet or Savoury)
Sweet version:
3 eggs, 1 1/4 cups milk, 1 cup caster sugar, 1 cup desiccated coconut, 1/2 cup GF plain flour (I use White Wings), 125 gms melted butter (I use Nuttelex), grated zest & juice of 1 lemon or orange, 1/4 teaspoon grated nutmeg.
Place all into a 1.5 litre casserole dish except nutmeg. Beat or whisk well. Sprinkle with nutmeg & cover dish with cling wrap. Microwave on 60% power for 15 minutes. Serves 8.
Savoury version:
Replace caster sugar, coconut, juice, rind & nutmeg with 1/2 cup finely chopped shallots, 1/2 cup chopped ham, 1/2 cup grated cheddar cheese & 1/4 cup cornflour then sprinkle with a little pepper. May need an additional 5 minutes in the microwave.
